About This Book

The manual offers practical, step-by-step guidance for waitstaff and household servants on meal preparation and service, covering courses from breakfast to supper and special occasions such as picnics and travelling luncheons. It details table setting and presentation, sideboard and side‑table arrangement, timing and sequence of serving, care and cleaning of dishware, silver, and lamps, and techniques for carving and washing. Interwoven are rules of conduct, adaptability, truthfulness, and attention to guests' needs, including care for invalids and the elderly. Checklists, sample menus, and procedural tips emphasize efficiency, neatness, and courteous, unobtrusive service in a domestic dining-room.

If old people are among the guests, there are many little things outside the line of prescribed duties which may sometimes be done for them. Elderly persons are so grateful to those who see and remember their especial needs and wishes that it seems quite natural and proper that they should offer gifts to those who are thoughtful for them.

But the things I speak of are those which a true waitress will do wherever she is placed. She will do them for a person without money as quickly as for one who has money. She will do them not because she is a waitress, but because she is a woman—a woman with a warm heart and a willing hand.
