BOILED SWEET POTATOES

As the skin of sweet potatoes does not come off well after cooking it is best to peel them before baking or boiling.

Select large sweet potatoes, put them in boiling water, and let them boil from half to three quarters of an hour. Peel them and arrange them in a hot dish, with ½ cup of melted butter poured over them.
